高筋面粉 High Protein Flour 250g

全麦面粉 Whole Meal Flour 250g

即溶酵母 Instant Yeast 10g

 

B

红糖 Brown Sugar 20g

Salt 9g

Water 300g

橄榄油/牛油 Oil Olive Oil/butter 25g

 

D

太阳花籽 Sunflower Seed 30g

南瓜子 Pumpkin Seed 30g

 

 

Method

  1. To Mix: Mix ingredients (A) for 1 mins, then add in (B), mix well to form a dough and then add (C), continue to knead until smooth and elastic ,add in (D) and mix well..
  2. Basic Proofing: cover the dough in a warm place to rise for 30-40 mins until it is double in bulk.
  3. Divide and moulding : Portion the dough into 450g each, round it up.
  4. Intermediate Proofing: Cover and leave to proof for 15 mins.
  5. Shaping: Flatten each dough to a longish shape, roll up into oval shaped dough. Transfer to a greased sandwich loaf tin
  6. Final Proof: Cover and leave to final proof of 60 mins until 90% full .
  7. Bake: Preheat oven at 200℃. Bake for 35-40 mins till done.

1. 搅拌:预先将材料A混合拌匀,加入(B) 搅拌成面团,再将(C)加入搅拌至麵糰富有彈性, 最后加入(D拌匀即可.

2. 基本发酵∶让面团在温热的地方,發酵30-40分鐘至面团体积两倍大.

3. 分割滚圆:将面团分割每个160克, 滚圆,

4. 中间发酵:松弛15 分钟。

5. 整形:将面团擀成椭圆形,放入烤模

6. 最后发酵:60 分钟-至面团涨到9分满

7. 放入预热的烤箱,以200 度烘烤35-40分钟即可
