Ingredients 材料

Superfine Flour 低筋面粉 75g

Baking Powder 泡打粉 2g

Milk Powder 奶粉 5g

Sugar 糖 10g

Salt 盐 5g

Water 水 25g

Oil 油 40g

Egg Yolk 蛋黄 75g

Vanilla 香精 1tsp

 

Egg White 蛋白 150g

Sugar 糖 90g

Cream of Tartar 塔塔粉 1g

 

Spring Onion 青葱

Chicken Floss 鸡丝

Mayonnaise 美乃兹

 

Method

  1. Sieve superfine flour, add sugar, baking powder and matcha powder and mix well.
  2. Add in oil, water, eggs and mix until well-combined batter.
  3. Beat egg white for 1 min on high speed, add in cream of tartar and sugar, beat till stiff meringue.
  4. Combine meringue and batter with a spatula.
  5. Pour into lined tray, spread with spring onion and chicken floss. Bake at 180ºC 18-20 minutes.

 

 

做法

  1. 低筋面粉过筛加入糖, 泡打粉和抹茶粉搅拌均匀
  2. 加入油, 水和蛋黄搅拌至光滑无颗粒
  3. 将蛋白打发一分钟,加入塔塔粉,糖分三次加入,打发至湿性接近干性发泡
  4. 将蛋白霜和面糊轻轻拌均匀
  5. 倒入垫纸的烤盘,均匀撒上青葱与鸡丝。 以180ºC烘烤18-20分钟。
  6. 脱模后抹上美乃兹,均匀撒上鸡丝,卷起即可。
